The evaluation environment reads your documents in your browser, exactly as the paid product does — parsed locally, scrubbed of personally-identifying information, with only pseudonymized structured data leaving the device. It runs on separate hardware with no network route to the paid environment, and that pseudonymized data is deleted within 7–14 days or on upgrade.
When you upgrade, nothing about the document handling changes — it was browser-side all along. What changes is persistence: the paid product keeps your working set; the sandbox was always temporary.
